While eating chia seed pudding and typing this, I can safely say that chia seed pudding is one of the tastiest, nutritionally rich puddings (or even breakfasts if you're feeling cheeky) that you'll come across. It's especially good for those who don't eat animal products etc, as it's high in protein and omega 3 fatty acids. Too add to this marvellous pudding, it's incredibly simple and versatile!
I meant it when I said that it was versatile, you can change it so much by using different flavours, by combining it with smoothies etc. But for this post I'll give a base that you can work from.
WHAT YOU'LL NEED:
-3 tablespoons of chia seeds
-350ml of Oat milk (Any plant based milk will work. Water also works fine too.)
-1/2 tsp of vanilla extract
-1 tsp of your chosen sweetener (e.e agave syrup or honey.)
-A large glass and a tablespoon
1. Put your chia seeds in the bottom of your large glass
2. Pour your liquid in slowly while simultaneously stirring with a tablespoon. Don't be afraid with your stirring, get that wrist moving!
3. Once the liquid is all in, stir for another couple of minutes
4. Add in the sweetener and vanilla extract
5. And stir!
6. Cover with cling film and then put in the fridge overnight
You should be able to see plenty of chia seeds floating around, but there should be enough room for them to expand.
TIP: If there's a lot of chia seeds floating on the top after you've done all your stirring, try your best to get the majority of them in the liquid. But, if they're being little devils then put it in the fridge for 20 mins (ish) and then stir them again. It'll be easier to submerge them now as they will have absorbed some of the liquid.
As I mentioned earlier, you can substitute the liquid with a smoothie! Just make sure the smoothie isn't too thick. It's a great way to mix it up though.
